Being a self-taught chef, I've experimented with many recipes to make them lower in fat and calories. Recipes listed here are either already lower in fat or I've modified them to my own cooking style - LOTS of flavor LOWER in fat.
Carribbean Rice and Pork
Prep Time: 10 min Total Time: 30 min Makes: 4 servings
Ingredients: 1 lb. pork tenderloin, cut into chunks, fat and silverskin removed 1 Tbsp. oil 1 medium onion, chopped 2 medium carrots, chopped 1 can (14 oz.) pineapple chunks, drained 1 can (14 oz.) water 1/4 cup Bottled Sweet Barbecue Sauce 1 tsp. ground ginger 1 green pepper, chopped 2 cups uncooked Instant White Rice
COOK tenderloin in oil in a large skillet. Add onion and carrots and cook until pork is no longer pink inside. STIR in pineapple, water, barbecue sauce, ground ginger, green pepper and rice. BRING to boil; cover and let stand 5 minutes. ***Calories 420, Total fat 8g, Saturated fat 2g, Cholesterol 65mg, Sodium 230mg, Carbohydrate 58g, Dietary fiber 4g, Sugars 18g, Protein 28g, Vitamin A 160%DV, Vitamin C 35%DV, Calcium 4%DV, Iron 20%DV

Crawfish or Shrimp Louise
Ingredients: Crawfish tails uncooked 1 lb. (Shrimp can be used as a substitute - use 36-40ct) Butter-flavored sprinkles 1 tbs. Olive oil 3 tbs. Green onions 1 bunch diced ¼" in thickness Parmesan cheese ½ cup Mushrooms (large) ½ lb. julienne ¼" in thickness Garlic 1 tbs. (pureed) Tomato (medium) 1 each diced ¼" in thickness Italian breadcrumbs 1/3 cup Black pepper to taste Salt to taste Pinch cayenne
Procedure: Heat crawfish tails separately from sauté and move to side, heat oil; sauté green onions, garlic, butter-flavor sprinkles and mushrooms, add tomato; add crawfish. Add breadcrumbs and Parmesan cheese. Heat thoroughly. Can be served immediately or placed in casserole and reheated later.
Yields: 2-10 oz. casserole servings
